Quinoa is an excellent alternative to white rice or couscous. It should usually be rinsed or soaked before use.
Quinoa is a herbaceous plant which is grown for its edible seeds. These seeds are rich in fibre, protein, and vitamin B as well as other minerals. Quinoa also contains all 8 essential amino acids, it is so good for you that the United Nations have designated it as a supercrop.
We love to use quinoa as an alternative to porridge for a protein boosting breakfast. It also works really well with curries and it’s delicious when sprinkled over salads.
The best way to cook it is to use two cups of water for every one cup of seeds. Bring to the boil then cover, simmer and cook for approximately 15 minutes.
