Spanish Paprika is great in tomato sauces and stews as it adds great flavour as well as a brilliant red colour.
Spanish Paprika is known as pimentón in Spanish. It is a fundamental element of Spanish cooking – it is what makes chorizo red! It is made by taking peppers, capsicum annuum, and drying them before grinding. The resulting red spice can be added to all sorts of different dishes to add colour and flavour.
There are two main producers of paprika, Spain and Hungary. In Spain, paprika was initially made by monks a preservative for meats they had cured themselves. They then expanded its use as a seasoning for cooked dishes. The warmer Spanish climate makes their paprika stronger and slightly more bitter than the milder Hungarian alternative.
