Penne is traditionally cooked al dente (firm to bite) and its shape makes it particularly good to add to sauces as the sauce will coat the pasta inside and out.
White penne pasta is cylinder shaped with the ends cut at an angle. Its name come from the latin for pen and its shape is meant to imitate a fountain pen nib.
Penne is one of the few types of pasta who’s date of invention can be clearly determined. in 1865, Giovanni Battista Capurro, a pasta maker from Genoa obtained a patent for a diagonal cutting machine. This allowed him to cut pasta into the penne shapes without crushing them.
